Personally, I absolutely love the combination of warm apple pie with cool whipped cream.
And since that's not one of the healthiest treats, I felt a strong desire to try and find an alternative that's delicious and at the same time a good choice for my body.
So here it is! I seriously love this so much! I guess it kind of seems like a fall/winter dessert, but honestly, I don't care how hot or cold it is outside, or what time of day.
This is truly one of my favorites! And so healthy, you can have it for breakfast. *LOVE*
Ingredients list:
6 (more or less, however much you want) Granny Smith apples, in cubes or slices
For the crumble you use as much of the ingredients listed below as you desire, as long as you stick to 1/3 of each ingrediënt
1/3 buckweat flour
1/3 almond meal (I used my kitchen processor to turn almonds into meal)
1/3 gluten free oats
Cold butter (keep adding until you reach the right dough consistency)
a little bit of maple syrup or coconut Sugar
some cinnamon
a little bit of vanilla extract
Preheat your oven to about 180 °C/356 F. Transfer the apple into an oven dish or a skillet and add some cinnamon and maple syrup to taste.
In a large mixing bowl, combine the buckweat flour, almond meal, oats and the cold butter. Use a fork to create a good dough consistency. You want to make sure you don't use too much butter, or the crumble will become too soft. So use enough to combine all ingredients and get them to ''stick'', but again, try not to overuse. Feel free to experiment a little!
When your crumble dough is ready, pour it over the apple mixture and place in the oven. Bake for about 40 minutes (depending on your oven). Let it sit for a few minutes, but definitely enjoy this while it's still warm! Serve with some coconut cream (recipe will follow), yoghurt or, for your ''off-days'', some vanilla ice cream. ;)
