I've been trying a lot of new things lately, but I have to say, I'm *very* happy how this one turned out.
If you enjoy pancakes in the morning, you will love this recipe. In a healthy and nutricious way!
Plus, you can also make these more savory and have them for dinner. I say we have a winner!
What you need:
Teff meal
1 1/2 tsp baking powder
1/2 eggs
(almond) milk
1 TSP coconut sugar (optional)
1 tsp cinnamon
a little bit of vanilla extract
Pinch of sea salt
Whisk everything together in a large mixing bowl until you have a slightly runny batter. Heat up some oil in a pan and poor part of the batter in. Make sure you get a crepe-like thickness. Wait a little while so they get lightly brown and crispy. Try not to touch them too much, because they break pretty easily (that won't change the great flavor though!) Turn over and give it about three more minutes. Done!
I served my husband's portion with pecans, maple syrup and a little bit of powdered sugar. I enjoyed mine with some sugar-free strawberry jam. Delish! Feel free to message me if you have any questions. :)
