Whether it's early in the morning or late at night, a good slice of banana bread is always a winner.
So I've been experimenting to find a recipe for a more healthy version of this treat, that doesn't lose any of it's yumminess. And I am proud to say that I have!
Plus, with this recipe, you can adjust accordingly, to make it as healthy --or less healthy for one of those days ;) -- as you please.
Oh, and did I mention that this recipe is ''thrown together'' very quick and easily? Oh yea!
Now, for the ingredients:
200 g/1.67 cup buckweat flour
150 g/3/4 cup palm- coconut sugar (this is optional)
1 1/2 tsp baking powder
1/2 tsp cinnamon
60 ml/1/4 cup apple sauce or pureed pumpkin
(if you use pumpkin, I'd suggest adding a little more moisture)
3 pureed bananas
Chopped walnuts (optional)
1/2 tsp vanilla extract
2 eggs
a pinch of sea salt
Preheat oven to 180°C/356 F. Combine all ingredients in a large mixing bowl and whisk together. Grease a loaf tin with some coconut oil and transfer the dough in the loaf tin. Bake for about 45 minutes (longer or shorter depending on your oven).
If you store it in your fridge it'll become a little smoother/creamier. I like it with a little strawberry jam and/or butter. Enjoy!
