Isn't one of the hardest things, especially when trying to get/stay healthy, to find great recipes that actually taste the way it's described?
Especially when you're dealing with diseases or allergies it can be very difficult.
Since I wanted to find something good that was gluten free, paleo and also ok to eat while I'm trying to lose weight, I knew I was up for a challenging task.
BUT, I kept going, googling information, reading recipes, looking at photo's, etc. and now I have come up with some very satisfying recipes! Time to share the first!
I call these my 'Hanneke's peanutbutter cups', because I wanted to create a much healthier version of the Reese's one. And I did it!
Not only are these incredibly delicious, they're also super easy to make.
And don't get freaked out by the phrase ''au bain-marie'', because it's really super simple. I promise. ;)
Now, for the recipe and instructions:
What you need is: coconut oil (I prefer the unscented one), pure peanutbutter (without added sugars etc.), cocoa powder, vanilla extract, salt, coconut sugar or maple syrup (or any other sweetener that you like to use), some type of mold (I use one for chocolates/bonbons) and a little bigger (paper) liners (as big as you want your chocolates to get).
Melt the peanutbutter, au bain-marie style, with some of the coconut oil, a pinch of salt and some sweetener of your choice. As soon as this is done, poor it into the mold, cover with cling wrap and place in the freezer for about 1-2 hours. Right before that's done, melt the rest of the coconut oil with cocoa, also au bain-marie, and add the vanilla, a pinch of salt and sweetener. I didn't add any measurements purposefully, because you just need to taste and see for yourself what's your preference.
